Bio-Nanocomposite Helps Keep Food Fresh

How to keep foods fresher, longer.

A bio-nanocomposite is a type of food coating created from egg white powder, glycerol and cellulose, and food scientists recently discovered that it keeps produce like strawberries and avocado fresher for a longer period, not only in appearance but also in water retention and firmness. These findings were documented in Advanced Materials. The goal? To find a coating that could extend the shelf life of fresh produce so as to reduce the food waste that contributes to world hunger.

The bio-nanocomposite limited the fruit’s oxygen exposure, slowing down the ripening process, and prevented water from evaporating, thereby delaying wilting. For vegans or those with egg allergies, alternative coatings created with soy and corn protein are in the works. So, in the future, you might be less likely to reach into the fridge and pull out a container of fuzzy raspberries.
