What Motivates People to Go Veg

Health is the biggest reason cited for eating more tofu, but not for lasting commitment.

A survey of 8,000 people in the U.S. and Holland showed that health was the top reason for nonvegetarians to consider adopting a vegetarian diet. But what predicts whether someone will stick to eating beans instead of beef? Researchers from the Department of Psychology at the University of California, Davis, found that people who stopped eating meat for environmental and animal rights reasons were the most committed to adhering to a meat-free diet over the long haul.

The findings were reported in PLOS ONE.
