Nutrition experts often point to today’s supersized plates and glasses as one cause of America’s rising obesity rates. Now
researchers are pointing to another culprit: corpulent cookbooks.

Over the past 70 years, cookbooks have drastically increased the calorie count in the recipes they feature. Not only do today’s supersized recipes use more calorie-dense ingredients than our grandmothers’ formulas; they also yield fewer servings and larger individual serving sizes—sometimes as much as double what the original recipe called for. If you can’t find vintage cookbooks,
remember to make healthy substitutions in your recipes and be sure to monitor
portion sizes.
