Tasty Veggie Toppers

Want to get your family or clients to eat more of the healthy green stuff? Test out these simple toppings on any fresh or frozen veggie dishes:

Orange-Sesame Drizzle. Whisk together 2 tablespoons (tbs) reduced-sodium soy sauce, 2 tbs orange juice, 1 tbs rice vinegar, 1 tbs toasted sesame oil, 2 teaspoons (tsp) sugar, 1/2 tsp chili-garlic sauce, 2 tsp minced fresh ginger and 1 clove of minced garlic. Warm in the microwave, if desired, and pour over greens such as spinach or broccoli. Top with toasted sesame seeds.

Lemon-Garlic Dressing. Whisk together 2 tbs extra-virgin olive oil, 1 tsp grated lemon zest, 2 tsp lemon juice and 1 clove of minced garlic. Warm in the microwave, if desired. Season with salt and pepper, and use to dress asparagus or green beans.

Spicy Peanut Sauce. Mix 1/4 cup natural peanut butter and 2 tbs hot black tea (or boiling water); stir until smooth. Stir in 1 tbs reduced-sodium soy sauce, 1 tbs lime juice, 1 tsp brown sugar, 1 clove of minced garlic and 1/4 tsp crushed red pepper flakes. Spoon over cooked bok choy or cabbage.
