Star-Spangled Salsa

Three team members from San Diego–based Jimbo’s…Naturally! Natural Foods Grocer recently treated the IDEA Tribe to an informative Lunch and Learn session as part of IDEA’s ongoing wellness initiative. The Jimbo’s team demonstrated three delicious recipes and shared samples of all the food. This inspired several IDEA staffers to get in the kitchen and try their hands at these healthy eats.

This colorful fruit-based salsa, courtesy of Jimbo’s test kitchens, will be a great addition to your 4th of July celebration. Serve with organic tortilla chips, veggie sticks or a protein of your choice.

  • 1 C organic blueberies
  • 1 C diced organic strawberries
  • 1 C diced jicama
  • 1/3 C chopped organic cilantro
  • 1/4 C finely chopped organic red onion
  • 2 T finely chopped orgainc jalapeno pepper, stemmed and seeded
  • juice of 1 large organic lime
  • sea salt, to taste

Recipe Key: C = cup | T = Tablespoon

In medium bowl, combine blueberries, strawberries, jicama, cilantro, red onion, jalapeno and lime juice. Stir until well combined. Season with salt, to taste. Serve at room temperature or chilled. Make 3 cups.
