Clean out some freezer space and dig out the canning equipment, because your local fruit stands and farmers’ markets are about to explode with summer fruit and vegetables.
Try this exercise to help you plan your strategy for extending the summer bounty: stand over the kitchen sink with a dish towel nearby and enjoy the juicy nectar of the fruits you’ve been craving for months as you devise ways to squirrel away some of this goodness before it’s gone. Will you freeze it? Will you can it? What about making jams or compotes? Whatever you decide, enjoy it fully, as the harvest is fleeting.
This month, look for apricots, beets, blueberries, cherries, corn, green beans, kiwi, peaches, peas, nectarines, strawberries, watermelon, yellow squash and zucchini.
