As mentioned above I am wanting to pursue a degree in Sports and Science or Fitness in Canada, please let me know as to which college would be the best to do so?

Any college is best college.

Getting any 2-4 year degree really helps- but when it comes down to it I personally think its all how you sell yourself as a fitness professional.
