I own many Eating Well and Cooking Light cookbooks and like them all. My favorite of the bunch is called ‘The Essential Eating Well Cookbook’. In addition to great recipes, it has a few overview charts like roasting charts for vegetables and grain and bean cooking guides which makes it a great reference book as well. Even though it has been around for a while, it is still available (I checked www.amazon.com.)
Canyon Ranch Cooking is my “go to” for clients and myself. It lists tips and techniques to healthier cooking, shares great flavorful, tasty, and simple meals, and snacks, as well as their nutritional equivalence per serving. Makes a great gift, home treasure, and client borrowing tool.
