What is an alternative (healthy) to eating chinese noodles?

I use the different types of Shirataki noodles – fettuccini, spaghetti. As stated above, only 20 calories for a 4 oz serving and made with tofu. There are also “miracle noodles” made out of konjac root. I have eaten them on occasion, but they are no match for the shirataki noodles.
If you’re looking for something with a crunch, instead of noodles I add small amounts of pecans or walnuts.
