I use the different types of Shirataki noodles – fettuccini, spaghetti. As stated above, only 20 calories for a 4 oz serving and made with tofu. There are also “miracle noodles” made out of konjac root. I have eaten them on occasion, but they are no match for the shirataki noodles.
If you’re looking for something with a crunch, instead of noodles I add small amounts of pecans or walnuts.
If you can find it in your area health food stores, try “Explore Asian” brand ‘pasta’ made from beans. They offer soybean spaghetti, black bean thin spaghetti and others. They contain about 180 cal. per serving and no fat. The glorious part is each serving gives you about 20 grams of protein. Last week I made a vegie stir fry and topped it on the soybean spaghetti and my husband and son wolfed it down without a clue. It’s also a vegan and gluten free food.
