Ive been the Personal Training Director for 7 LAfitness locations over the last 2 years. One of the most beneficial things for our members and guests would be to host a weekend bootcamp. The following are some of my favorite formats.
Have one trainer set up 4 different body weight stations across the gym. Examples would be an upper body station, lower body station, core station and conditioning station. Based on the theme of the workout (fat loss, increase muscle, general fitness and endurance) that would determine how kong your at each station
Have 2-4 trainers pick 1-2 of their favorite workouts or specialties and occupy a station. Set up in the format above.
Pick 3-5 machines and 3-5 free weight exercises. Makes sure the free weight exercises incorporate a partner. Lead your group through the two areas going back and forth and incorporating a conditioning exercise in between. Cycle through this for 30-40minutes

In addition to what everyone else mentioned, you can try to alternate between upper and lower body exercises. For an added twist you can superset using one isotonic exercise and one isometric exercise i.e. crunches followed by plank. Using a timer keeps everyone on task and keeps your rotations uniform regardless of the interval you choose. Hope this helps.

We do a lot of what Sue suggests: the games and partner drills are great fun for all; we even incorporate tug-of-war. You could have an express class to save time while changing things up and have a free time portion for the client to do as they wish, a follow-the-leader session where a participant does a move that everyone else does and set up obstacle courses with pieces of equipment set up strategically.
The sky is the limit; go wild with your imagination; but, in a safe way.

Our clients LOVE doing partner work. We will do a circuit where they each do one exercise for an allotted time, then they switch, or one jumps rope while the other does an exercise.
Bootcampers also LOVE GAMES! WE do relays, Tag, The train run-where they get into a line and hold onto the persons shoulder in front and they all start running.
