My opinion is if you are going to have to monitor your club with cameras, why not staff it?
I would do a survey to figure out if this would be something your community would respond to.
Would al retired person work out at 2 am? Do you offer your center to neighboring communities?
I know Anytime Fitness is 24/7/365. If you have one in your area, drop by and see how they have approached it.
As far as your trainers credentials, at our facility we have a file with a copy of our certifications and cpr with expiration dates.

Snap Fitness is in this area and advertises that they are open 24 hours. The way they do this is with a trainer available during the peak daytime hours. The doors are locked when unoccupied by a trainer; so, the members have their own “key” to gain entry at other times of the day/night.
This is what I have seen and it seems to work.
