I recommend either the good old fashion paper and pencil method, or using the online MyPlate.gov capability. I like both.

www.myfitnesspal.com works great – they can just share their diary with you so you can access it to see exactly what they’ve eaten. along with the macronutrient breakdown. It also has a smart phone app so there is no excuse to not log everything.

Very user friendly and clients can add you onto their site to communicate with them.
