I am a recovering addict who would like to open a fitness and tanning center. what grants are available?

First, congratulations on your journey of staying substance free. This is a difficult path, and I give you credit for taking it.
I do think before you start looking for grants it would be a good idea to start with a business plan. If you were to find a place that offers grants they would be looking to see whether you had one, so a good idea to start there.
Do you have a background in fitness? If not, and if it is possible to do so you might consider looking into some training and certifications. While I’ve known people who have opened businesses in areas that are not their specialty one has a better chance of success with some understanding of the nature of the services and products one wants to offer.
Then you want to look at all of the costs of opening such a business, as well as how many such businesses are in your area and what they charge and how well they are doing. It never hurts to network with people working in the business. Research is sometimes a question of looking things up, sometimes leg work of going places, and sometimes cups of coffee with people in the industry. This all takes time, but will help you to figure things out before you make a start.
I am going to make one comment on something you did not ask about and ask you to think carefully about the tanning part. This is not advice you asked for, but as a wellness person I would really ask you to look at the health risks of this service.
