there is an awful lot of information out there, and it is very difficult to differentiate between fact and fiction. Personally, I got the Fitness Nutrition certification from NASM and also rely on information from the Center for Science in the Public Interest https://cspinet.org/. I have signed up for their Nutrition Action Healthletter.
I agree with Karin, there is a lot of half knowledge out there. How detailed do you want to go into the topic? Do you want to read about the chemical basics also (I.e. What are the many different Lipids, what causes the yoyo effect)?
My tip: look for books recommended by a highly esteemed nutrition institution. In those books you can find their sources, and these sources are a good start to get great knowledge.
