Hi Bella,
I don’t keep track of all of them, and I do switch things up every week. I also add progressions to the class to keep the participants challenged. However, having some good workouts to keep in a binder or file or app is a great “go to” whenever you get stuck and need a routine–or, if you need some suggestions and just need to modify a few exercises.
I would keep a few just to help with planning!
