Any kind of demo should include exercises that are safe, yet challenging for any individual regardless of their fitness level.
I would include the following exercises, (again this is what I would do) 1, squat 2, push-up (reg/modified) 3, a row 4, an overhead press and 5, lastly a variation of the plank (prone iso-abs).
Just remember that most people can do most exercises, however you should know how to modify all the exercises to keep it a safe and enjoyable environment.

They probably move patients around quite a bit so showing them the mechanics of properly helping someone out of bed, rolling them over and picking up stuff properly and sitting at the computer properly etc.
