As always, the stretches should complement the type of work one is going to engage in. If I were teaching the class, I would perform dynamic stretches during the warmup and static stretches for the cool down. Hope this gives you some direction.

That depends upon the certifying body. As Karin stated, most require 2.0. However, the number of CECs with the ACSM is dependent upon the certification one possesses.
