Which educational institution/program is the most recognized when starting to become a certified health and fitness instructor?

What stands out to me in your question is that you want to be a "health fitness instructor" the only two education certification bodies that I know offer that credential are the American Council on Exercise and the American College of Sports Medicine. Hope this helps.

Karin, I have to be honest and say I know very little about orthotics, hence, I can't pass judgment. I will say though that a shoe that supports the foot well is always a good idea.
