I began my career in nutrition with an undergraduate degree in nutritional biochemistry from Vassar College while simultaneously raising three children. My education continued at Tufts University where I received my Masters and Ph.D. degrees in nutritional biochemistry from the USDA Human Nutrition Research Center on Aging at Tufts University. In addition, I worked with the USDA Human Nutrition Research Center’s team that completed ground breaking research on the effects of weight training in 80 and 90 year olds. Along with several colleagues, I founded the American Academy of Sports Dietitians and Nutritionists – www.aasdn.org and established the Nutrition Specialist Certification. In January of 2012, AASDN established the National School Lunch Awareness Initiative and, as part of the initiative, developed the AASDN school lunch placemat which incorporates a star-associated food rating system aimed at motivating and empowering children to make healthy food choices.
