- Understand the Food and Drug Administration's (FDA) protocol for testing artificial sweeteners for carcinogens, mutations, reproductive and pharmokinetic safety.
- Identify the differences between the American Dietetic Association's position statement and other national organizations' on the safety of nutritive and non-nutritive sweeteners.
- Recognize and determine the health issues surrounding sucrose and its effects on blood pressure, depression and addiction.
- Know how high-fructose corn syrup can decrease mineral absorption and potentially lead to bone fragility, anemia and difficulty in controlling blood sugar levels.
- Recognize the functions of carbohydrate metabolism from fructose, honey, sugar alcohols, stevia and non-nutritive sweetening options.
- Understand the FDA's upper limits (Adequate Daily Intake) based on kilograms per body weight for aspartame, sucralose, acesulfame potassium, saccharin, sugar alcohols and other sugars, that are determined to be safe or dangerous for long-term consumption.
