What could be more refreshing on a sultry summer day than a frozen, no-fat, low-calorie ice treat made from healthy green tea and ginger? Finish this delightful dessert with a garnish of thinly sliced lemons. You can also use other types of brewed tea for this recipe.
3 cups boiling water
4 regular-sized green tea bags
1 (2-inch) piece peeled fresh ginger, quartered
1/2 cup honey
3 tablespoons fresh lemon juice
Pour boiling water over tea bags and ginger in medium bowl. Cover and let stand for 5 minutes (brew stronger or weaker according to preference). Add honey and lemon juice, and stir to combine. Strain tea mixture through sieve into another bowl, discarding any solids. Cool completely.
Pour cooled mixture into 8-inch square baking dish. Cover, and freeze for 8 hours, or until firm. Remove dish from freezer, and scrape entire mixture with fork until fluffy. Makes six servings.
Per Serving: 88 calories; 0 grams (g) fat; 0 g protein; 23.9 g carbs; 0.1 g fiber; 0 milligrams (mg) cholesterol; 1.2 mg sodium; 0.1 mg iron; 2.2 mg calcium.
