Food for Thought:

Soft cheeses, like mozzarella, can be difficult to slice or grate: their high moisture content makes the cheese hard to cut. Try this tip next time a recipe calls for cutting a soft cheese: prior to using, put the cheese in the freezer for 10–15 minutes. Cooling the cheese makes it less creamy and easier to slice or grate.
