Coffee that is organically grown (meaning without pesticides, as well as purchasing arabica beans (grown at higher elevation and thus needing no pesticides) are the healthiest. I have also found that the least acidic coffee method of brewing is cold brewed toddy coffee. With 67% less acid than traditional brewing methods, even people with stomach problems can drink this mellow brew. 1 pound of coffee to 9 cups of water in a toddy maker for 12 hours produces a concentrate that you can store in your refrigerator for up to 18 days. Ours never lasts that long! Mix 1/4 cup toddy concentrate with 3/4 cup boiling water to drink. It is an excellent, smooth tasting coffee with no 'bite' to it. Toddy makers can be found online.

I continue to read pros and cons regarding coffee & caffeine. My own personal view is that in moderation, early in the day it's fine. However, I do not react acutely to caffeine and some people do.

I do believe that if you're going to drink coffee, organic is the way to go. Because coffee beans are ground up and then have hot water expressed through them, any pesticides that remain on the beans will end up in your coffee and in you.

Thanks Joni for the info on cold brewed coffee. Have been wanting to try that.
