I'm not sure if it's the best school but I do know that Bastyr University offers a lot of wonderful hollistic programs. The University is located in Seattle, Washington.

Self Education is your best bet. I feel any food educational programs are sufficient lacking behind times.

Bastyr is great if you can go there, as well as the University of Bridgeport.
However, since I cannot relocate to do either, I am doing the Holistic Health Coach course through the Institute for Integrative Nutrition. The school is based out of New York but learning is done online and through an iPad (well, when I started last September it was an iPod Touch but they've upgraded). I am having a blast and learning a lot. Also, with a fitness background, there's a lot of stuff you find that you already know if you are even remotely up to date on different dietary theories.
