I like egg with spinach on a piece of bread, oatmeal also works too.

This is a hard question to answer due to everyone has a different taste palette. Therefore, certain foods will liked by some and not by others. Me personally I start my day with oatmeal and peanut butter and some source of protein. Remember breakfast should be one of your larger if not the largest meal of the day to provide the energy for the rest of the day.

Crockpot and blender are must-have tools for "quick and easy" in my kitchen!
Blender: night before - mix up fruit smoothie:
Fresh orange, frozen mango, fresh pineapple & banana
Milk or yogurt (mine is raw)
Egg yolk
Gelatin
Melted coconut oil
Crockpot: night before - put oatmeal on low. Top with butter or cream, milk, fruit, nuts, cinnamon.
Eggs are also great because they're quick and so loaded with nutrition. Add a piece of whole grain toast with butter and grab one of those "cutie" oranges on the way out the door.

Veggie Mini Quiches (Can be made ahead and frozen)
I love these for breakfast, but they are also great as appetizers or as a side dish.
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutesIngredients:
•3/4 cup liquid egg substitute or 3 large eggs or 3 /4 cup egg whites
•1 package frozen chopped spinach (10 oz.) or one large bunch fresh spinach
•3/4 cup shredded reduced-fat cheese
•1/4 cup diced red or green peppers or mixture of both
•1/4 cup diced onions
•Dash of hot pepper sauce
•Salt to taste - I like it salty and used a half teaspoon.
•Option: fajita spices
•Option: garam masala
•Option: add a few drops of truffle oil
Preparation:
Makes 12 mini-quiches
Need: muffin tin, cooking spray, oven
1. Heat oven to 350F
2. Spray the muffin tin cups with the cooking spray. Be sure not to omit this step, or the quiches will stick badly to the baking cups. Another option is to use silicone muffin pans.
3. Thaw and drain spinach - I wring it out well in my hand, which eliminates a lot of the "spinachy" taste for those who hate boiled spinach. If using fresh spinach, steam it in the microwave, press out all juice, then chop.
4. Mix the spinach, eggs or egg substitute, cheese, peppers, onions, hot pepper sauce, salt in a bowl.
5. Fill the muffin tin cups with the mixture.
6. Bake at 350F or 20 minutes. You will know they are done when a knife inserted in the middle comes out clean.
7. Remove from cups to serve.
Fajita spice variation: Add fajita spice to taste at step 4 (a dash to 1/8 teaspoon). If you like it spicy, you may even want to add a bit of chopped jalapeno.
Indian variation: Add garam masala to taste at step 4 (a dash to 1/8 teaspoon).

I think you can't go wrong with scrambled eggs and oatmeal on the side. It's quick and easy. (We cook a large pot of oatmeal made with steel-cut oats and water at the beginning of the week and divide it into servings in separate containers. Then it's ready to reheat). Another super quick option is to add a tsp of natural peanut butter to your oatmeal on the run. Also we have a meal replacement drink we use, and another option is non-fat Greek yogurt with blueberries, strawberries or cherries with walnuts on top!

My go to breakfast usually involves oatmeal, whole raw agave nectar, and fruit. Can't go wrong with that. I use instant oatmeal to keep my costs low, but you can buy loose oats from many stores. Choose what works best for you.
But, for my non-vegan friends, I suggest starting your day with the quickest of quick, Shakeology. It comes in chocolate and greenberry and there are tons of recipes to jazz it up and give you that much needed energy to start your day. Greek yogurt with berries and nuts, drizzled with some honey to taste.
100% whole grain cereal (such as shredded wheat) with skim milk and a piece of fruit.
Whole wheat tortilla spread with peanut butter and wrapped around a banana.

Smoothies work for me.
I always have frozen bananas in the fridge. Don't forget to take off the skin before you freeze it.
I use a base of either fruit juice or unsweetened almond milk. I add strawberries, peaches, mangos, papaya. Whatever fruit is in season and whizz it all together. The bananas give in a thick consistency and when one uses almond milk it comes out like a shake. To me it is healthy and satisfying!

Smoothies are quick and can be quite healthy as someone else mentioned. I like something in the range of oatmeal, spinach egg omelete, soy milk or juice and serving of fruit.
