Is there a cardio assessment I could do with a jump rope?

Not that I am aware of but I will be looking for an answer too. Never saw one that I remember in my materials.

Hi Jeremy,
while I have not heard of an assessment with a jump rope either, you could certainly create one for this one person even if it lacks reference data.
This could be timed to a cadence determined by a metronome, and then you can assess the heart rate at the end. For a re-assessment, you just need to establish the same cadence to have a valid point of comparison.

It would be a great way to evaluate your clients coordination, stamina, joint imbalances, along with aerobic capacity, etc
As Karin suggests, create one to fit your needs.

I am not aware of any clinical protocol that has been peer-reviewed. But as the great responses suggest just do it on your own.
