How do you keep your energy up with something other than coffee? I think it's time to quit!

I have found that eating live food has been very instrumental in keeping my energy up. Smoothies, fresh pressed vegetable cocktails, pasta dishes filled with vegetables (more vegetables than pasta), I find I sleep better and have more energy throughout the day.

Eating a lot of high-fiber, high-nutrient foods such as vegetables, fruits and beans keeps me ready to go. Green smoothies in particular are an excellent source of nutrients which help to produce energy. My favorite? Kale, spinach, frozen raspberries, and an orange in a high-speed blender.

I just read somewhere that an apple in the morning is a better wake up remedy then a cup of coffee. I haven't tested it out yet due to being out of apples however, I plan on it tomorrow after making a run to the market today!

Coffee and other stimulants are "counterfeit" energy. If we "need" them to get through the day, what we may really need more of is sleep, not caffeine. But that wasn't your question. :)
If my body needs sleep, I try to go ahead and close my eyes for 5 minutes, honestly. If that's not possible, I reach for natural sugars in small amounts--apple, banana, dried fruit. If I need more than that, I drink green tea, which still has caffeine, but less of it (and greater benefit).
Good luck on trying to quit coffee; I made the transition about 5 years ago and my health is so much better. However, I have adrenal issues so it was imperative for me to quit.

I workout. I see most of my energy increases from HIIT workouts, they seem to make everything else easier.

Nap if you possibly can. About 20 minutes helps boost me up.
