How do you keep your classes fun and fresh for participants who have been attending for years?

I can only speak for water aerobics. I have 'my' class on Friday afternoon and have been teaching it for y..e..a..r..s. And I have known some participants that long. I tend to use an interval format which allows for a lot of 'shake and bake'. Sometimes I take a piece of music and choreograph it through. Thus we have our own rendition of an aquatic Skater's Waltz.
But I also have to say that my participants are usually older and really like predictability.
But it seems to work: 16 years of teaching that one class, and people are walking out with smiles on their faces.

Provide some variation. Choreography is fun if you are experienced in that area. You can utilize movements where participants are walking toward each other and then away from each other. You can utilize the walls as a movement cue (march toward wall 1,2,3 etc). Then you can tell them to look to the opposing wall as the participants at that wall will dictate what movement they will be doing next. These are just a few examples as there is much more.

As much variety as possible for one. Try adding new equipment/exercises/drills/contest or incentives/rewards. Are you can ask your class to help with designing a NEW "fun" program.
